Green Goddess Chia Pudding

Look and feel like a goddess with this delicious chia pudding! 

Did you know that spirulina was consumed by the ancient aztecs? It has once again gained popularity and rightly so.

This tiny alga is a powerhouse of nutrition high in B vitamins, Copper, Iron, Magnesium, Potassium and containing small amounts of every other nutrient you can think of.

Ingredients

 

3 cup Coconut water

½ - 1 Tbsp Bali glow powder (adjust to taste)

2 Tbsp Lime juice, freshly squeezed

4 Tbsp Coconut butter

1/3 Cup Maple syrup

2 Tbsp Lime zest

3 Passionfruit, pulp scooped out

½ Cup Chia seeds

 

 

Suggested Toppings

 

Fresh or frozen berries of choice

Sliced banana

Hemp seeds

Coconut flakes

Bee pollen

Crushed nuts

 

 

Instructions

 

  1. Add the coconut water, bali glow powder, coconut butter, maple syrup and lime juice to a blender. Blitz on high until smooth. 
  2. Mix through the pulp of the passionfruit, chia seeds and lime zest. 
  3. Store in an airtight container and place in fridge for at least 4 hours or overnight. 
  4. When ready to serve, add a serve of the chia pudding to a bowl and sprinkle over toppings of your choice.
